¾ cup cocoa
½ teaspoon baking powder
2/3 cup oil (divided 1/3 + 1/3)
½ cup boiling water
2 cups sugar
2 eggs
1 1/3 cup flour*
1 teaspoon vanilla
¼ teaspoon salt
Stir cocoa and baking soda in a mixing bowl, add 1/3 cup of
the oil and boiling water. Stir until thickened. Add sugar, the additional 1/3
cup oil and eggs, stir until smooth. Add vanilla, salt and flour, stir until
combined. Pour into 13” x 9” pan sprayed with cooking oil, bake at 350* for
35-40 minutes.
*When I make these with garbanzo bean flour (1 1/3 cup),
people eat them up, so I don’t tell them they are wheat and dairy free!
